【Wine Sharing】A Taste of Georgia I - Visiting Mtevino
Our first visit to the winery of Mtevino was amazing. It is around an hour away from the city of Tbilisi. It runs a family-style hotel and restaurant for visitors and their staff were very friendly.
參觀Mtevino酒莊絕對是一個美妙的體驗,它離Tbilisi城市一個小時車程左右,並且經營了一個家庭式的精品酒店及餐廳,職員都非常友善。
Once you step into the lobby of the house, you see vines right in front of the glass doors! It was absolutely a delight to see such a view. This is only a small part of Mtevino vineyards but it is already good enough for a photo and a selfie!
當你踏入這間大屋,一片翠綠的葡萄田立即映入眼簾!雖然它只是Mtevino葡萄田的一小部分,但絕對足夠拍幾張照片打卡留念!
Then we came to the heart of Georgian style winemaking - the qvevri wines! These “holes” you see are the mouth of a qvevri, a special Georgian clay vessel for winemaking. They are hidden inside the ground to keep a stable temperature and left with an open mouth for air contact. This is the specialty in Georgia wines, especially for white wines. As you might have known, almost all white wines around the world avoid the contact of oxygen to keep the freshness of white wines. Here, it’s the opposite! They leave the mouth of qvevri open and cover the wines just with grape skins to encourage a slow contact of oxygen. This allows the white wines to get oxidised and turn to amber colour, which brings unique aromas to the wines. In case you don’t know, this is actually granted with the status of Intangible Cultural Heritage by UNESCO!

On the second floor of the house, they have their own laboratory for testing to make sure the quality of the wines are consistent. This added modern technology to the process of their very traditional winemaking to enhance the quality of wine.
在二樓,你會見到這個酒莊有自己的化學室,可以經常做化驗來確保葡萄酒品質的穩定性,將現代的科技與傳統釀酒技術結合,完美地將葡萄酒品質昇華!
