We found the perfect conditions to host our Origine project in Sicily, between the Valley of the Temples (province of Agrigento) and Marsala. Here I found some old, small tree vines which had achieved a perfect balance with the environment, so that no chemical fertilization had ever been used. We chose Grillo and Zibibbo, the grapes that are traditionally used in this area, to produce long ageing wines, then ancient vats that are half buried into the soil and old casks previously used for refining Marsala wines.

We used old cellar practices which allow us to reach a balance between acidity and sugar concentration, giving our grapes a perfect equilibrium. We start with a green harvest when the flowers start to become fruit so that the remaining grapes can fully develop their aromas; then we perform a step-by-step harvest, first picking the grapes that are outside and later picking the inner grapes. The grapes from a third variety are then put to dry in a ventilated area, so that there is an over maturation.

Winemaking
|
The first harvested grapes start to ferment thanks to the indigenous yeasts which are selected by the winemakers without adding any artificial ones. The second variety is then added. The fermentation continues and, when the wine is ready, we transfer it into the half-buried clay jars then the dried grapes from the third variety are added, in order to start a third fermentation. The grape skins are taken out of the amphorae during Holy Week.
The following summer we proceed with the wine clarification which is led by gravity, then at the beginning of November the wine is transferred into the ageing chestnut casks; these wooden containers must be in perfect conditions and have been already used to age wine for at least 10 years, allowing the wine to age and mature with no organoleptic interferences.
The whole process itself is quite long: six months of fermentation; six months for the static clarification, two years refinement in chestnut casks; six months of bottle rest. Almost four years after which Origine is ready to be uncorked.

Tasting Notes
|
A timeless wine, unspoilt and legendary.
Bouquet With peculiar Mediterranean and balsamic notes of mint, rosemary and wild herbs, the honey flavour emitted from the dried zibibbo grapes is mixed with oxidative notes resulting from the maturation in the amphora.
Flavour Hints of dehydrated fruits (apricot) tamarind, a light vanilla note, raw sugar and aged tobacco. There is a persistent aftertaste.
Alcohol Content 14%
Serving Temperature It depends on the uses: 10-12°C otherwise 14-16°C. The bottle needs to be open one hour before drinking.
Food Pairing Wine that lends itself to gastronomic experiments: try it with goat’s milk cheese and pecorino cheese; with Asian ethnic food, like an Indonesian Kambing Guling or a Lamb Biryani; it is also excellent with eggs and asparagus or courgettes; as a dessert wine it pairs well with apple strudel or almond paste desserts.

Winemaking
|
After arriving at the winery, the grapes are de-stemmed, crushed and then the must is brought to a temperature of 20-22° C. Alcoholic fermentation now starts and selected yeasts are added. The fermentation process is carried out at a temperature of 24-28° C. During the first three days of fermentation 4 brief daily top ups are done and then 2 long daily top ups for the following 5-9 days of fermentation, this dependent on the quality of the harvest. After the grapes have been racked and softly pressed, the wine is decanted at a temperature of 22-24°C this favouring the malolactic fermentation. As soon as this phase is concluded, the wine is poured into stainless steel tanks and is refined and perfected during the following 4-8 months. |
Tasting Notes

Colour Beautiful ruby red with light garnet hues.
Bouquet Ethereal, warm, with delicate notes of red berries, reminiscent of blueberry and cherry, followed by a spicy, balsamic note and in the end vanilla notes.
Flavour The wine is full on the palate, soft, warm and harmonious. The velvety tannings are barely noticeable and disappear quickly, it has good persistence. During the aftertaste phase, spicy and balsamic notes, as well as pleasant light liquorice notes.
Alcohol Content 13%
Serving Temperature 16-18° C
Food Pairing Ideal with all grilled, barbecued or braised red meats, including venison. Matches very well with meaty lasagne, moussaka, ragù Bolognese, spicy risottos and Indian curries. Also very nice with seasoned mature hard or soft creamy herby cheeses.

The Sicilian sun warms and matures these grapes with their extraordinary character. With slow rhythms and just a few gestures these gifts of nature are transformed into an intense, aromatic and soft ruby red nectar, enclosed in a jewel of a bottle. An organic wine that's out of the ordinary.
Colour Deep ruby red with light garnet hues.
Bouquet Elegantly fruity of cherry and plum, small spirited red fruits, light presence of vegetal tones of Mediterranean zones, myrtle and juniper berries. Hints of pepper and bent nuances. The toasted notes of sweet spices, cocoa, tobacco, mint and graphite are well present.
Flavour Mouth of great thickness, soft and at the same time pleasantly fresh. Good tannins in balance with a discreet flavour. Mineral finish and refreshed by balsamic sensations.
Food Pairing The perfect match is an elaborate, spicy and wild meat, as was used in Roman bacchanals. A compless wine, it is also recommended alone, in meditation with the company of a breeze.

A light sparkling wine, balanced and easy to combine with many dishes. The label is BRAND NEW and Val D'Oca offers it to you by inviting you to the tasting.
All the grapes that are used to give rise to this nectar come from a single year of production, particularly favorable. For this reason, on the label you will find the word Millesimato which indicates precisely this qualitative aspect. They are picked exclusively by hand.
At sight it is straw yellow with slight greenish reflections. As soon as it is poured into the glass, the elegant perlage begins to rise up to the surface and brings with it the refined olfactory scents. In fact, if we bring the glass closer to the nose, we can easily distinguish the aroma of white fruit like apple and pear and some citrus notes. Flowers are not lacking, wisteria and acacia are clear and persistent. The taste is well balanced between acidity, softness and flavor.
Suggested food to accompany: Excellent alongside regional first courses, based on fish or light second courses like grilled white meats or rolls and carpaccio in general. Ideal also for aperitifs accompanied by finger food, olives or other small snacks.
