Tasting Note	A harmonious, balanced, fine and elegant scent, where fruity notes stand out and are pleasantly rediscovered on tasting. Ideal combined with fish dishes and white meats. Colour Light straw yellow with greenish reflexes. Very bubbly when poured then maintaining a persistent perlage to the end. Bouquet Pleasant, light, fine, delicate, persistent and fruity with a characteristic hint of green and golden apple, followed by floral notes. Flavour This wine is velvety, fresh, lively, fruity, light and fluid with a fine perlage; it is well-bodied and harmonic, and has very good acidity and alcoholic degree; it is very persistent on the palate and best drunk when young.
Winemaking	It is obtained from selected and healthy grapes, and through 4-day whole fermentation in steel tanks; after “spumantizzazione” in temperature-controlled autoclaves according to the Charmat method, the wine is filtered and decanted with isobaric technique, and then bottled. The base wine is sterile filtered, the necessary sugars and selected special yeasts are then added and all is placed in autoclave to re-ferment until the desired bar pressure is reached.

Tasting Note	The brilliance of the garnet reflections on an intense ruby red, the Biferno is a wine with a full and aromatic taste. Olfactory nuances ranging from ethereal vanilla to sharp notes of spices and cinnamon. In the mouth it is rich, velvety and harmonious, perfect for enhancing red meat dishes or traditional cheeses. Colour Deep ruby red, with elegant grenade red nuances. Bouquet Intense, full and ethereal with good amplitude of nuances, on all we recognize notes of spices, vanilla cinnamon and wood. Flavour At the beginning it is strong and enveloping, smooth and velvety with just a delicate presence of tannins. At the end it is full, round, supported by a good acidity. Excellent aftertaste with pleasant hints of cherry, plum and vanilla nuances. Food Pairing Perfect with meat dishes, roasts and recipes made from beef and sheep noble cuts. Great matching with Italian traditional sausage and aged cheese such as Pecorino.
Winemaking	The vinification is done following the traditional red technique with daily mixing of the grapes skin for the first 3-4 days of maceration, and then we do a single long mixing at a controlled temperature of 25 ° C until the alcoholic fermentation is finished. This first part is then followed by a preparation of the best conditions for the starting of the malo-lactic fermentation. When the malo-lactic fermentation is completed the wine is then aged into stainless steel tank and into 500 liters tonneau for a minimum of 36 months. When the ageing is finished, our winemaker does the selection of the cuvéé in order to obtain the best aroma.

Tasting Note	With a pleasant and delicate aroma, a dry and velvety taste with an aftertaste of bitter almonds, ideal with seafood salads, perfect with white meats. Colour Straw yellow. Bouquet Pleasant, delicate, fruit, characteristic, intense and suggestive of apple and figs. Flavour This wine is dry, velvety, tasty and fruity with a slight after-taste of bitter almond; it is well-bodied and harmonic, and has good acidity and alcoholic degree; it is very persistent on the palate and best drunk when young.
Winemaking	It is obtained from selected and healthy grapes, and through 3-day whole maceration in steel vats; after alcoholic fermentation, the wine is decanted into steel tanks where the fermentation is completed (after a first decanting stage); atter on, the wine is filtered, decanted, and then bottled.
