A unique vinification producing fruity and airy: Grenache noir and Carignan are cold macerated for a short day then gently pressed to ferment the juices and not the grapes. As for a rosé wine.
Syrah, Clairette and Grenache, in traditional vinification, have a short maceration period of 7 days. The latter associated with the presence of white grape varieties limits the tannic contribution of Syrah.
This wine is aged for 3 months in coated concrete vats.
